Preparing the Chicken

Marinate the Chicken
In a bowl, combine olive oil, lemon juice, oregano, salt, and black pepper. Add the chicken breasts and ensure they are well coated. Let them marinate for at least 30 minutes.

Cook the Chicken
Heat a grill or skillet over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove from heat and let them rest for a few minutes before slicing.

Chop the Vegetables
Rinse and chop the romaine lettuce into bite-sized pieces. Slice the cucumber and cherry tomatoes in half. Thinly slice the red onion.

In a large mixing bowl, combine the chopped romaine, cucumber, cherry tomatoes, red onion, Kalamata olives, and feta cheese. Toss gently to mix.
