    Prepare the Mussels

    Rinse the mussels under cold water and scrub the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Make the Teriyaki Sauce

    In a small saucepan, combine soy sauce, mirin, brown sugar, and sesame oil. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and stir in minced garlic.

    Assemble the Dish

    Place the cleaned mussels on a baking sheet, open side up. Add a small amount of the teriyaki sauce into each mussel. Dot with butter and sprinkle with smelt roe.

    Broil the Mussels

    Preheat the broiler. Place the baking sheet with the mussels under the broiler and cook for 5-7 minutes, or until the mussels are cooked through and the tops are slightly browned.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped green onions and black sesame seeds. Serve immediately.
