Preparation Steps
1. Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer rice to a bowl.
2. Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar and salt. Pour the mixture over the cooked rice and gently fold to combine. Allow the rice to cool to room temperature.
3. Make Spicy Mayo
In a small bowl, mix Sriracha sauce and mayonnaise until well combined. Set aside.
4. Assemble the Roll
Place a bamboo sushi mat on a flat surface and lay one nori sheet shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Layer with yellowtail slices, avocado, cucumber, and a drizzle of spicy mayo.
5. Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying light pressure to keep the roll tight. Seal the edge of the roll with a little water.
6. Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top for garnish. Serve with soy sauce and additional spicy mayo if desired.
