    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to the rice cooker's instructions or bring to a boil, then simmer on low heat for 20 minutes until the water is absorbed. Remove from heat and let it cool.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, gently fold in the vinegar mixture until well combined. Allow the rice to cool to room temperature.

    Prepare the Salmon Filling

    Dice the fresh salmon fillet into small cubes. In a separate bowl, mix the diced salmon with sriracha sauce and mayonnaise until well coated.

    Prep Vegetables

    Slice the avocado and cucumber into thin strips.

    Assemble the Rolls

    Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving about an inch at the top. Lay a line of the salmon mixture, avocado, and cucumber across the center of the rice. Sprinkle sesame seeds on top.

    Roll the Sushi

    Using the sushi mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water. Repeat with the remaining nori sheets and fillings.

    Using a sharp knife, slice the rolls into bite-sized pieces. Serve with soy sauce on the side for dipping.
