Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt, then gently fold this mixture into the cooked rice.

Prepare the Fillings
While the rice is cooling, shred the crab meat and slice the tuna into thin strips. Cut the avocado in half, remove the pit, and slice it into thin strips.

Assemble the Roll
Lay a sheet of pink soy paper on a bamboo sushi mat. Spread a thin layer of sushi rice over the paper, leaving about an inch at the top edge. Place a few pieces of crab, tuna, and avocado along the bottom edge of the rice. Sprinkle with sesame seeds.

Using the bamboo mat, carefully roll the sushi away from you, tucking it tightly as you go. Moisten the top edge of the soy paper with a little water to help seal the roll. Once rolled, slice the sushi into bite-sized pieces.
