    Prepare the Tofu

    Drain the tofu and wrap it in a clean kitchen towel. Place a weight on top to press out excess moisture for about 15 minutes. Cut the tofu into 1-inch cubes.

    Coat the Tofu

    In a shallow bowl, spread the cornstarch. Lightly coat each tofu cube with cornstarch, shaking off any excess.

    Fry the Tofu

    In a deep skillet or pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the tofu cubes and fry until golden brown and crispy on all sides, about 5-7 minutes. Remove and drain on paper towels.

    Prepare the Ponzu Sauce

    In a small saucepan, combine the soy sauce, mirin, dashi stock, grated ginger, and salt. Heat over low heat until warmed through, then remove from heat.

    Serve

    Place the fried tofu cubes on a serving plate. Drizzle the ponzu sauce over the tofu and garnish with finely chopped scallions. Serve warm.
