Method

Preparing the Udon Noodles

  1. 1

    Boil the Water

In a large pot, bring 4 liters of water to a rolling boil over high heat.

  2. 2

    Cook the Udon Noodles

Add 300 grams of udon noodles to the boiling water. Cook according to package instructions, usually around 8-12 minutes, until the noodles are tender but chewy.

  3. 3

    Drain the Noodles

Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set aside.

Making the Broth

  1. 4

    Combine Ingredients

In a large pot, combine 1 liter of dashi stock, 4 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 teaspoon of salt.

  2. 5

    Heat the Broth

Heat the mixture over medium heat until it comes to a gentle simmer. Do not let it boil vigorously.

Assembling the Udon

  1. 6

    Serve the Noodles

Divide the cooked udon noodles into serving bowls.

  2. 7

    Add the Broth

Ladle the hot broth over the noodles in each bowl.

  3. 8

    Garnish with Toppings

Top each bowl with sliced green onions, strips of nori, tempura, and a sprinkle of toasted sesame seeds.
