Ramen Broth Preparation

Prepare the Broth
In a large pot, combine the chicken bones, pork bones, and water.

Add Aromatics
Add the ginger, garlic, and green onions to the pot.

Simmer
Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 4 hours, skimming off any scum that forms on the surface.

Season the Broth
After 4 hours, strain the broth into a clean pot. Add sea salt and soy sauce to taste. Keep the broth warm.
Noodle and Topping Preparation

Cook the Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

Prepare Toppings
Slice the chashu pork. Soft-boil the eggs and peel them. Cut the nori sheets into quarters.

Assemble the Ramen Bowls
Divide the cooked noodles into bowls. Pour the hot broth over the noodles. Top each bowl with chashu pork, a soft-boiled egg, menma, nori sheets, and garnish with chopped green onions and sesame seeds.
