Method

Prepare the Broth

    Cook the bones

    Place the chicken or pork bones into a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer. Cook for at least 4 hours, skimming off any foam or impurities that rise to the surface.

    Add flavors

    After 4 hours, add soy sauce, mirin, dashi powder, and salt to taste. Let the broth simmer for another 30 minutes to meld the flavors together.

    Strain the broth

    Once done, strain the broth through a fine mesh sieve into another pot. Discard the solids and keep the broth warm on low heat.

Prepare the Noodles and Toppings

    Cook the ramen noodles

    In a separate pot, bring water to a boil. Add the ramen noodles and cook according to the package instructions, usually around 3-4 minutes. Drain and rinse under cold water to stop the cooking process.

    Prepare the soft-boiled eggs

    Bring a small pot of water to a boil. Gently add the eggs and cook for 6-7 minutes. Transfer to an ice bath for a few minutes, then peel and slice in half.

    Chop the vegetables

    Slice the green onions and prepare the nori sheets by cutting them into strips.

    Slice the chashu (if using)

    If you are using chashu pork or chicken, slice it thinly and set aside.

Assemble the Ramen

    Combine ingredients

    In a large bowl, place a serving of noodles, pour the hot broth over the noodles, and add the toppings: soft-boiled eggs, sliced green onions, nori, chashu (if using), bamboo shoots, and menma.

    Serve

    Serve immediately while hot, allowing each person to customize their bowl with additional soy sauce or salt as desired.
