Prepare the Avocados
Slice the avocados in half, remove the pit, and scoop the flesh out. Cut the avocado flesh into wedges.
Dust with Masa
In a shallow dish, add masa harina, salt, and black pepper. Dredge the avocado wedges in the masa mixture, ensuring they are well coated.
Fry the Avocados
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the masa-dusted avocado wedges in the oil. Fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
Sauté the Vegetables
In the same skillet, remove excess oil, leaving about 1 tablespoon. Add sliced bell peppers and onions, sauté until softened, about 5 minutes. Add spinach and cook until wilted.
Garnish and Serve
Finish with pico de gallo, chopped cilantro, a drizzle of crema, and a sprinkle of cotija cheese. Serve immediately.
