Prepare the Duck Breast

Score the skin of the duck breast in a crosshatch pattern. Season both sides with salt, black pepper, and Cajun seasoning.

Sear the Duck

In a skillet over medium heat, add 1 tablespoon of olive oil. Place the duck breast skin-side down and cook for about 6-8 minutes until the skin is crispy. Flip and cook for an additional 4-5 minutes. Remove from skillet and let rest.

Cook the Andouille Sausage

In the same skillet, add the Andouille sausage and cook for 4-5 minutes until browned. Remove and set aside.

Prepare the Cajun Red Beans and Rice

In a pot, combine the red beans, cooked rice, and Cajun seasoning. Add water as needed and simmer for 15 minutes until heated through.

Sauté the Vegetables

In the same skillet, add another tablespoon of olive oil. Sauté the chopped onions and bell peppers for 5 minutes. Add the spinach and cook until wilted.

Fry the Okra

In a separate pan, heat the remaining olive oil and fry the okra until golden brown. Season with salt and pepper.

Plate the Dish

Slice the duck breast and serve it alongside the Cajun red beans and rice, sautéed vegetables, and fried okra. Enjoy!
