Prepare Tuna Tartare Mixture

Dice the tuna

Using a sharp knife, dice the fresh ahi tuna into small 1/4-inch cubes. Keep chilled until ready to mix.

Finely dice the English cucumber (unpeeled) and chop the green onions. Combine in a medium bowl.

Add the diced tuna to the bowl with cucumber and green onions. Drizzle with soy sauce, sesame oil, and lime juice. Season with salt and black pepper. Gently mix to combine. Cover and refrigerate for 10-15 minutes to marinate lightly.

Prepare Avocado Base

In a small bowl, gently toss the diced avocado with lime juice and salt. Set aside.

Make Spicy Mayo

In a small bowl, whisk together mayonnaise, Sriracha, and lime juice until smooth. Adjust spiciness to taste by adding more Sriracha if desired.

Prepare Wonton Chips

Heat vegetable oil in a deep skillet or saucepan over medium-high heat (about 350°F/175°C).

Cut wonton wrappers in half diagonally to form triangles. Fry in batches for 30-45 seconds per side, or until golden brown and crispy. Drain on paper towels and let cool.

Assemble and Serve

On a serving plate, arrange a spoonful of avocado base. Top with a generous scoop of tuna tartare mixture.

Drizzle spicy mayo over the tartare. Sprinkle with black sesame seeds and microgreens or chives if desired.

Serve immediately with freshly fried wonton chips on the side.
