Method
Pizza Dough
Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5–10 minutes until frothy.
Mix Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a sticky dough forms.
Knead Dough
Transfer dough to a floured surface and knead for 8–10 minutes until smooth and elastic.
First Rise
Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1–1.5 hours or until doubled in size.
Tomato Sauce
Simmer Sauce
Add canned tomatoes, salt, oregano, and chopped basil. Simmer uncovered for 15–20 minutes, stirring occasionally. Use a spoon to break up the tomatoes.
Cool
Remove from heat and let cool before spreading on pizza dough.
Pizza Assembly
Preheat Oven
Preheat your oven to 500°F (260°C) and place a pizza stone or baking steel inside if available. Allow at least 30 minutes of preheating.
Prepare Dough
Punch down the risen dough and divide into two equal portions. Roll out one dough ball on a lightly floured surface into a 12-inch circle. Dust a pizza peel or baking sheet with semolina flour or cornmeal and place the dough on top.
Add Sauce and Toppings
Spread a thin layer of the cooled tomato sauce over the dough, leaving a 1/2-inch border. Sprinkle evenly with shredded mozzarella. Add pepperoni or charcuterie and a few fresh basil leaves.
Bake Pizza
Slide the pizza onto the preheated pizza stone or baking steel. Bake for 7–10 minutes or until the crust is golden and cheese is bubbling and slightly browned.
Finish and Serve
Remove from the oven, drizzle with a bit of olive oil, add extra basil if desired, slice, and serve immediately.
