Marinated Beef

Prepare the marinade
In a medium bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, rice vinegar, chopped green onions, and black pepper. Stir until the sugar is dissolved.

Marinate the beef
Place thinly sliced beef into a large zip-top bag or bowl. Pour the marinade over the beef, making sure all pieces are coated. Seal and refrigerate for at least 1 hour, preferably overnight.

Cook the rice
Rinse the jasmine rice in cold water until the water runs clear. Combine rice, water, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 10 minutes. Fluff with a fork before serving.

Make the pickling liquid
In a small saucepan, combine rice vinegar, sugar, salt, and water. Heat over medium heat until the sugar and salt are dissolved. Remove from heat and let cool.

Assemble the Korean BBQ Bowl
In a bowl, add a generous scoop of jasmine rice. Top with grilled marinated beef, a portion of pickled vegetables, and a spoonful of kimchi. Garnish with sesame seeds and sliced green onions. Serve warm.
