Main Dish
Prepare the Beef Mixture
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent (about 3-5 minutes).
Cook the Beef
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat.
Combine Ingredients
Stir in the chopped bell peppers, canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Mix well.
Simmer the Mixture
Reduce heat to low and let the mixture simmer for about 20 minutes, stirring occasionally.
Toppings
Prepare Toppings
While the beef mixture is simmering, prepare the toppings. Slice the avocados and chop the green onions.
Set Up Serving Station
Set out shredded cheese, sour cream, sliced avocados, and chopped green onions for guests to add to their servings.
Side Dish
Prepare Cornbread
In a mixing bowl, combine the cornbread mix, eggs, milk, and honey. Stir until just combined.
Bake Cornbread
Pour the batter into a greased baking dish and bake according to the box instructions (typically about 20-25 minutes or until golden and a toothpick comes out clean).
Serve
Let the cornbread cool for a few minutes before cutting into squares. Serve warm alongside the beef mixture.
