Cake
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
Cream Butter and Sugar
In another bowl, beat the unsalted butter until creamy. Gradually add the sugar mixture and beat until fluffy.
Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract.
Bake the Cake
Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool the Cake
Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
Frosting
Prepare the Frosting
In a mixing bowl, beat the unsalted butter until creamy. Gradually add in the powdered sugar, mixing until smooth.
Add Cream and Vanilla
Add heavy cream and vanilla extract to the frosting mixture. Beat until light and fluffy. Again, if desired, add food coloring to achieve the desired shade.
Frost the Cake
Once the cake is completely cool, place one layer on a serving plate. Spread a generous amount of frosting on top, then place the second layer on top and frost the entire cake.
Decoration
Add Sprinkles
Sprinkle the colorful sprinkles generously over the frosted cake.
Top with Candles
Place the birthday candles on top of the cake for decoration.
Optional Fruit Topping
If using, arrange fresh fruit on top of the cake as an additional decoration.
