Season and Cook Chicken
Preheat a grill or skillet over medium heat. Rub the chicken breasts with olive oil, salt, black pepper, and garlic powder. Cook for 6–7 minutes on each side or until fully cooked and internal temperature reaches 165°F (74°C).
Remove from heat and let rest for 5 minutes. Then, shred the chicken into bite-sized pieces and set aside.
BBQ Sauce
Prepare BBQ Sauce
In a small saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, onion powder, and garlic powder. Stir well to combine.
Bring to a simmer and cook for 5–6 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and allow to cool slightly.
Toss the shredded chicken with about half of the BBQ sauce until well coated. Reserve the remaining sauce for drizzling.
Toppings and Assembly
Assemble the BBQ Chicken Flatbread
Preheat the oven to 425°F (220°C). Place the prepared pizza crust or flatbread on a baking sheet. Lightly brush with olive oil.
Top with shredded mozzarella cheese and thinly sliced red onions.
Bake in the preheated oven for 10–12 minutes, or until the cheese is melted and bubbly and the edges of the crust are golden brown.
Remove from the oven and sprinkle with chopped fresh cilantro before serving.
