    Cook the Brown Rice

    Rinse the brown rice under cold water until water runs clear. In a medium saucepan, bring 4 cups of water to a boil with 0.5 tsp salt. Add the rice, reduce heat to low, cover, and simmer for 35–40 minutes, or until rice is tender and water is absorbed. Remove from heat and let sit covered for 10 minutes. Fluff with a fork.

Spicy Ahi Tuna

    Prepare the Spicy Tuna

    In a medium bowl, combine mayonnaise, sriracha, soy sauce, and sesame oil. Mix until smooth. Add diced ahi tuna and sliced green onions to the bowl and gently fold until the tuna is evenly coated. Cover and refrigerate for 10–15 minutes to marinate while preparing other ingredients.

    Prep the Vegetables

    Slice the avocado and radish. Julienne the cucumber and carrots. If using frozen edamame, cook according to package instructions, drain, and let cool. Set all vegetables aside for assembly.

Sesame Soy Dressing

    Make the Sesame Soy Dressing

    In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until well combined. Stir in toasted sesame seeds. Set aside for serving.

Assembly

    Assemble the Ahi Tuna Bowl

    Divide the cooked brown rice between 4 serving bowls. Arrange spicy ahi tuna, avocado slices, julienned cucumber and carrots, edamame, and radishes on top of each. Drizzle with sesame soy dressing just before serving. Garnish with additional sesame seeds or green onions if desired.
