Pizza Dough Preparation

    Prepare the Dough

    In a bowl, mix warm water, sugar, and yeast. Let sit until frothy (about 5 minutes). In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

    Knead and Rise

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Roast the Mushrooms

    Preheat the oven to 400°F (200°C). Toss sliced mushrooms with olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until golden.

    Prepare the Truffle-Ricotta Cream

    In a bowl, mix ricotta cheese with truffle oil, salt, and pepper until smooth and creamy.

    Sauté the Kale

    In a skillet, sauté chopped kale with a little olive oil over medium heat until wilted (about 5 minutes). Season with salt and pepper.

Assemble and Bake

    Assemble the Pizza

    Preheat the oven to 475°F (245°C). Roll out the dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet. Spread the truffle-ricotta cream over the dough, layer with roasted mushrooms, sautéed kale, and sprinkle grated Grana Padano on top.

    Bake the Pizza

    Bake in the preheated oven for 12-15 minutes until the crust is golden and the cheese is bubbly. Remove from oven and let cool for a few minutes before slicing.
