Pickle the Onions and Beets
Thinly slice the red onions and beets. In a pot, combine equal parts water and apple cider vinegar, then bring to a simmer. Add the sliced vegetables and simmer for 5-7 minutes. Remove from heat and let cool, then refrigerate for at least 1 hour.

Prepare the Fruits
Segment the grapefruit and orange, removing any seeds and pith. Set aside.

Prepare the Cheese
Cube the white cheddar cheese into bite-sized pieces.

Mix the Dressing
In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and black pepper until emulsified.

Assemble the Salad
In a large bowl, combine the pickled onions and beets, grapefruit, orange segments, white cheddar cheese, pumpkin seeds, and sunflower seeds. Drizzle with the apple cider vinaigrette and toss gently to combine.
