1. Prepare the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken thighs with salt and black pepper. Add the chicken to the skillet and sear until browned on both sides, about 5-7 minutes.
2. Add Chipotle and Tomatillo Salsa
Once the chicken is browned, add the chipotle peppers and tomatillo salsa to the skillet. Cover and simmer on low heat for about 20-25 minutes, or until the chicken is cooked through and tender.
3. Shred the Chicken

In a large bowl, place a base of mixed greens. Top with the chipotle and tomatillo-braised chicken, followed by a dollop of sour cream, shredded cheddar cheese, sliced avocado, and a sprinkle of fresh cilantro. Drizzle lime juice over the top before serving.
