Marinate the Chicken
In a bowl, combine the soy sauce, sesame oil, brown sugar, minced garlic, minced ginger, salt and pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

Cook the Chicken
Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely caramelized.

Garnish and Serve
Remove the chicken from the heat and let it rest for a few minutes. Slice the chicken and arrange it on a serving plate. Top with chopped green onions, cilantro, and toasted sesame seeds before serving.
