Prepare the Slaw
In a large bowl, combine shredded Brussels sprouts, mandarin orange segments, olive oil, honey, salt, and black pepper. Toss until well mixed and set aside.

Prepare the Shrimp
Preheat the oven to 400°F (200°C). Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for crushed pumpkin seeds.

Bread the Shrimp
Dip each shrimp in flour, shaking off excess. Next, dip in beaten eggs, allowing excess to drip off, then coat with pumpkin seeds, pressing gently to adhere.

Bake the Shrimp
Place the breaded shrimp on a baking sheet lined with parchment paper. Bake for 12-15 minutes until shrimp are cooked through and crust is golden.

Serve
Plate the Brussels sprout mandarin slaw and top with the pumpkin seed crusted shrimp. Drizzle with cranberry coulis if desired.
