Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Dredge the Calamari

Coat the calamari rings in the flour mixture, shaking off any excess.

Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari

Fry the calamari in batches for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

In a small bowl, mix together the mayonnaise, minced garlic, and Dijon mustard until smooth.
