    Prepare the Prime Rib

    Preheat your oven to 450°F (230°C). Season the prime rib generously with salt and black pepper. In a large skillet, heat olive oil over medium-high heat and sear the prime rib on all sides until browned, about 5-7 minutes.

    Roast the Prime Rib

    Transfer the seared prime rib to a roasting pan and roast in the preheated oven for about 20 minutes. Then reduce the oven temperature to 325°F (165°C) and continue to roast until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours. Remove from the oven and let rest for at least 20 minutes.

    Make the Au Jus

    In the same skillet used for searing, add chopped onions and minced garlic. Sauté until soft. Add beef broth and scrape the bottom of the pan to deglaze. Simmer for 10-15 minutes to reduce slightly. Strain if desired.

    Prepare the Hoagie Rolls

    While the prime rib rests, melt butter and brush it on the inside of each hoagie roll. Toast the rolls in the oven until golden brown, about 5 minutes.

    Slice the Prime Rib

    Thinly slice the prime rib against the grain.

    Assemble the Sandwiches

    Layer slices of prime rib into each toasted hoagie roll. Drizzle with au jus and add a generous dollop of creamy horseradish sauce.

    Serve the sandwiches warm with additional au jus on the side for dipping.
