    Prepare the Lobster

    In a pot, melt the butter over medium heat. Add the lobster tails and poach for 5-7 minutes until fully cooked. Remove and set aside. Reserve the butter.

    Sauté Aromatics

    In the same pot, add shallots and garlic. Sauté until translucent, about 3-4 minutes.

    Build the Base

    Add the white wine and cook for 2-3 minutes to reduce. Stir in the tomato paste and cook for another minute.

    Add Stock

    Pour in the fish stock and bring to a simmer. Cook for 15-20 minutes.

    Blend the Mixture

    Using an immersion blender, blend the soup until smooth. If you prefer a finer texture, strain the soup through a fine mesh sieve.

    Finish the Bisque

    Stir in the heavy cream, reserved lobster butter, salt, and pepper. Add fresh thyme and parsley. Cook for another 5 minutes on low heat.

    Serve

    Ladle the bisque into bowls, add chunks of lobster meat, and a dollop of crème fraîche on top. Garnish with additional herbs if desired.
