Prepare the Glaze
In a small saucepan, combine blood orange juice, honey, soy sauce, and salt. Bring to a simmer over medium heat and reduce until thickened (about 10 minutes). Set aside.

Sear the Salmon
Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the salmon, skin-side down, and sear for 4-5 minutes. Flip the fillets and brush with the blood orange glaze. Cook for another 3-4 minutes until cooked through.

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss the mixed vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Make the Beurre Blanc
In a small saucepan, combine white wine and shallots. Simmer until reduced by half. Lower the heat and whisk in butter, one tablespoon at a time, until fully incorporated and the sauce is creamy. Season with salt to taste.

Plate the Dish
Serve the seared salmon on a bed of roasted vegetable hash, drizzled with beurre blanc and topped with additional blood orange glaze if desired.
