    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and halve the fingerling potatoes. In a bowl, toss the potatoes with 1 tablespoon of olive oil, salt, black pepper, and fresh thyme.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, turning them halfway through.

    Prepare the Vegetables

    While the potatoes are roasting, wash and chop the market vegetables into bite-sized pieces. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Cook the Vegetables

    Add the chopped vegetables to the skillet and sauté for about 5-7 minutes, or until they are tender but still crisp. Season with salt and pepper to taste.

    Cook the Wagyu Sirloin

    In a separate pan, heat a little olive oil over medium-high heat. Season the Wagyu sirloin with salt and pepper on both sides. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Remove the sirloin from the heat and let it rest for 5 minutes before slicing. Serve the Wagyu sirloin alongside the roasted fingerling potatoes and sautéed market vegetables.
