Make the Pie Crust
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the mixture comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
Peel, core, and slice the apples. In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Toss to coat the apples evenly and let sit for about 15 minutes.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one dough disc on a floured surface to fit a 9-inch pie dish. Place the crust in the dish, fill it with the apple mixture, and roll out the second dough disc to cover the pie. Seal the edges and cut slits in the top for steam to escape.

Bake the Pie
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for another 30-35 minutes, or until the apples are soft and the crust is golden brown.

Let the pie cool for at least 10 minutes before serving. Slice and serve warm with a scoop of vanilla ice cream.
