Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (about 110°F or 43°C) and sugar. Sprinkle the yeast over the water and let it sit for about 5-10 minutes until foamy.

Make the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until it forms a shaggy dough.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Preheat the Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Prepare the Toppings
Slice the fresh tomatoes and mozzarella cheese into thin slices. Set aside.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a 12-inch circle or stretch it with your hands.

Add the Toppings
Place the dough on a parchment paper or a floured pizza peel. Drizzle 1 tablespoon of olive oil over the base, add slices of mozzarella cheese and tomatoes. Season with salt and black pepper to taste.

Bake the Pizza
Transfer the pizza to the preheated oven (or onto the pizza stone). Bake for 10-12 minutes or until the crust is golden brown and the cheese is bubbling.

Garnish and Serve
Remove the pizza from the oven and top it with fresh basil leaves and the remaining tablespoon of olive oil. Slice and serve hot.
