Preparation
Roasting the Onions
Preheat your oven to 400°F (200°C). Slice the onions into thin wedges and place them in a mixing bowl. Add olive oil, salt, and black pepper, and toss until well coated. Spread the onions on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until they are caramelized and tender.
Cooking the Sausage
While the onions are roasting, heat a large skillet over medium heat. Remove the fennel sausage from its casing and crumble it into the skillet. Cook the sausage, stirring occasionally, until it is browned and cooked through, about 8-10 minutes. Drain excess fat if necessary.
Assembly
Combining Ingredients
Once the sausage is cooked and the onions are roasted, combine them in the skillet. Pour in the tomato sauce and stir to combine. If using, add Calabrian chiles to taste for heat. Let the mixture simmer on low heat for about 5-10 minutes to allow flavors to meld.
Adding Cheese
While the sauce is simmering, tear the fresh mozzarella into pieces. After the sauce has simmered, add the mozzarella to the skillet and gently stir until the cheese begins to melt.
Serving
Garnishing and Serving
Once the cheese has melted and the mixture is hot, remove it from heat. Stir in the fresh basil. Serve the fennel sausage and onions hot, garnished with additional fresh basil if desired.
