Crust Preparation

Make the Dough
In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Add softened butter and mix until crumbly. Stir in egg yolk and cold water until the mixture forms a dough.

Chill the Dough
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Heat the Milk and Cream
In a medium saucepan, combine milk and heavy cream. Heat over medium heat until just simmering.

Mix Dry Ingredients
In a separate bowl, whisk together granulated sugar and cornstarch.

Whisk the Eggs
In another bowl, beat the eggs and slowly whisk in the heated milk mixture. Gradually add the sugar and cornstarch mixture.

Cook the Custard
Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat and stir in vanilla extract.

Cool the Custard
Pour the custard into the cooled tart shell and refrigerate until set, about 2 hours.

In a small saucepan, heat apricot jam over low heat until melted. Brush the melted jam over the fruit arranged on top of the custard.
