Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes, or until golden brown. Remove from the oven and let cool while preparing the filling.
Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well incorporated.

Mix in Vanilla and Eggs
Add the vanilla extract and then add the eggs one at a time, mixing on low speed until just combined. Avoid overmixing.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake
Bake in the oven for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.
