Preparation

    Prepare the Broccolini

    Rinse the broccolini under cold water and trim the ends. Pat dry with a kitchen towel.

    Prepare the Red Pepper Coulis

    Roast the red bell peppers in an oven at 400°F (200°C) for about 20 minutes until charred. Allow to cool, then remove skins, seeds, and stems. Blend the peppers with olive oil until smooth. Season with salt to taste.

    Prepare the Balsamic Reduction

    In a saucepan, bring the balsamic vinegar to a simmer over medium heat. Reduce heat to low and let it simmer for about 15-20 minutes until it thickens. Stir occasionally to prevent burning.

    Fry the Capers

    Heat a small amount of olive oil in a pan over medium heat. Add the capers and fry for 2-3 minutes until they become crispy. Remove and drain on a paper towel.

    Char the Broccolini

    Preheat a grill or grill pan over medium-high heat. Toss the broccolini with a bit of olive oil and season with salt. Grill for about 4-6 minutes, turning occasionally until charred and tender.

    On a serving plate, spoon some of the red pepper coulis as a base. Arrange the grilled broccolini on top, drizzle with balsamic reduction, and sprinkle with fried capers and grated Pecorino Toscano.
