Calamari

Method

Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Make the Breading

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, cayenne pepper, and garlic powder.

  3. 3

    Drench in Buttermilk

Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, allowing any excess to drip off.

  4. 4

    Coat the Calamari

Dredge the buttermilk-coated calamari rings in the flour mixture until well-coated. Shake off any excess.

  5. 5

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, frying until golden brown, about 2-3 minutes. Use a slotted spoon to transfer to a paper towel-lined plate to drain.

Spicy Marinara Sauce

  1. 7

    Sauté the Garlic

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 8

    Add the Tomatoes

Stir in the canned crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring the mixture to a simmer.

  3. 9

    Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.

  4. 10

    Finish the Sauce

Stir in the chopped fresh basil just before serving.
