Broth Preparation

    Prepare the Broth

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced ginger and chopped garlic, sautéing until fragrant (about 1 minute).

    Add Stock

    Pour in the lobster stock and bring to a simmer. Add soy sauce and lime juice, stirring to combine.

    Add Vegetables

    Once the broth is simmering, add the sliced scallions, mushrooms, and edamame. Cook for about 5-7 minutes until the vegetables are tender.

Rice Preparation

    Cook Coconut Rice

    In a separate saucepan, combine jasmine rice, coconut milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

Salmon Preparation

    Cook Wild Salmon

    Season the salmon fillets with salt and black pepper. In a skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the salmon, skin-side down, and cook for 4-5 minutes on each side or until cooked to your preferred doneness.

Assembly

    Serve the Dish

    In bowls, add a portion of the coconut rice, ladle over the ginger lobster broth with vegetables, and top with the cooked wild salmon. Garnish with additional scallions or lime wedges if desired.
