Prepare Sushi Rice
Rinse the Rice
Place the sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and water is absorbed.
Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Assemble Nigiri
Shape the Rice
Wet your hands with water to prevent sticking. Take a small portion of the sushi rice (about 2 tablespoons) and form it into an oval shape, making a small indentation in the center.
Add Salmon
Place a slice of fresh salmon over the shaped rice, pressing it gently to adhere.
Serve
Serve the nigiri with soy sauce, wasabi, and pickled ginger on the side.
