Preparation

  1. 1

    Cook the Quail Eggs

Bring a pot of water to a gentle boil. Carefully add the quail eggs and boil for about 3-4 minutes.

  2. 2

    Cool and Peel

Once cooked, immediately transfer the quail eggs to an ice bath to stop the cooking process. After they have cooled, gently peel the shells off.

  3. 3

    Prepare the Dashi Sauce

In a saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Heat over medium heat until the sugar is dissolved.

  4. 4

    Chop Green Onions

Finely chop the green onions and set them aside for later use.

Cooking

  1. 5

    Simmer the Eggs

Add the peeled quail eggs to the saucepan with the dashi sauce. Simmer gently for about 10 minutes to allow the eggs to absorb the flavors.

Serving

  1. 6

    Plate the Uzura

Carefully remove the quail eggs from the saucepan and place them on a serving plate. Drizzle some of the dashi sauce over the top.

  2. 7

    Garnish

Sprinkle the shredded nori and sesame seeds over the quail eggs and garnish with chopped green onions before serving.
