Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear.

Cook the Rice
Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the seasoning mixture. Let it cool to room temperature.
Making Spicy Tuna Filling

Prepare the Tuna
Dice the sushi-grade tuna into small pieces and place it in a mixing bowl.

Mix the Ingredients
Add mayonnaise, sriracha sauce, chopped green onions, and sesame oil to the bowl with the tuna. Mix until well combined.
Rolling the Sushi

Lay Out the Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Slice the Roll
Using a sharp knife, slice the roll into bite-sized pieces, wiping the knife with a damp cloth between cuts.

Garnish
Sprinkle sesame seeds over the sushi for garnish.
