Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed sushi rice and 1.25 cups of water in a rice cooker. Cook according to the manufacturer's instructions, or bring to a boil in a saucepan, then reduce to a simmer, cover, and cook for 18-20 minutes until the water is absorbed.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let cool to room temperature.

Prepare Crab Mixture
In a mixing bowl, combine the imitation crab meat (shredded), mayonnaise, Sriracha sauce, and finely chopped green onion. Mix well until all ingredients are evenly combined.
Assemble the Rolls

Prepare the Rolling Station
Lay a bamboo sushi mat on a flat surface and place a nori sheet, shiny side down, on the mat.

Add Sushi Rice
Wet your hands with water to prevent sticking. Take about a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Add Crab Filling and Avocado
Place a line of crab filling in the center of the rice and top with a few slices of avocado.

Roll the Sushi
Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to form a tight roll. Roll until you reach the exposed edge of the nori.

Seal the Roll
Dab a little water on the edge of the nori to seal the roll. Use the bamboo mat to shape it further if needed.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Repeat the process with the remaining ingredients. Sprinkle sesame seeds on top for garnish. Serve with soy sauce and wasabi.
