    Wash and Prepare Shishito Peppers

    Rinse the shishito peppers under cold water and pat them dry with a paper towel. Trim the stems if necessary, but leave them intact for grilling.

Making the Soy Sake Glaze

    Combine Ingredients

    In a medium saucepan, combine the soy sauce, sake, brown sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Stir well to combine.

    Simmer the Glaze

    Place the saucepan over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for about 5-7 minutes, stirring occasionally until the sauce thickens slightly. Remove from heat and let it cool.

    Add ground black pepper to the glaze mixture, adjusting to your taste preference. Set aside.

Grilling Shishito Peppers

    Preheat the Grill

    Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled.

    Place the shishito peppers directly on the grill grates. Grill for about 3-4 minutes, turning occasionally, until they are blistered and charred on all sides.
