Prepare Salmon

Marinate the Salmon
In a bowl, combine soy sauce, mirin, sesame oil, minced garlic, and grated ginger. Add the salmon fillets, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

Skewer the Salmon
After marinating, preheat a grill or robata grill. Skewer the salmon fillets onto wooden or metal skewers.

In a blender or food processor, combine ripe avocados, lime juice, salt, and chopped cilantro. Blend until smooth and creamy, adjusting seasoning to taste.

Cook the Sauce
In a saucepan over medium heat, combine plum preserves, rice vinegar, soy sauce, minced ginger, and red pepper flakes. Stir until the mixture is well combined and heated through. Simmer for 5-7 minutes until slightly thickened.
