Prepare the Marinade
In a large mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, chopped scallions, black pepper, and red pepper flakes. Whisk until the sugar is dissolved.

Marinate the Ribs
Place the pork ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to infuse.

Grill the Ribs
Remove the ribs from the marinade and discard the leftover marinade. Place the ribs on the grill and cook for about 20-25 minutes, turning occasionally until they are nicely charred and cooked through.

Check for Doneness
The ribs are done when the internal temperature reaches 145°F (63°C) and the meat is tender. If you prefer them more tender, cook for an additional 10 minutes.

Rest and Garnish
Remove the ribs from the grill and let them rest for 5-10 minutes. Before serving, sprinkle with sesame seeds and chopped cilantro for garnish.
