Marinating the Beef

    Prepare the Marinade

    In a large bowl, combine soy sauce, mirin, sugar, grated ginger, minced garlic, sesame oil, and black pepper. Whisk together until the sugar is fully dissolved.

    Marinate the Beef

    Cut the beef sirloin into 1-inch cubes and add them to the marinade. Stir to ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Preparing the Skewers

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Assemble the Skewers

    Thread the marinated beef cubes onto the skewers, alternating with chunks of bell peppers, zucchini slices, red onion pieces, and whole mushrooms if desired. Aim for 3-4 pieces of beef per skewer, interspersed with vegetables.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F / 190°C).

    Place the skewers on the grill and cook for 3-4 minutes on each side, or until the beef reaches your desired level of doneness (medium-rare to medium is recommended).
