Preparing Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a large bowl and rinse it under cold water until the water runs clear, about 3-4 times. This removes excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

Season the Rice
While the rice is cooking, in a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, let it cool slightly and then transfer it to a wooden or glass bowl. Gently fold in the vinegar mixture with a wooden spatula. Allow the rice to cool to room temperature.

Slice the Unagi
Once fully cooked, allow the unagi to rest for a few minutes, then slice into bite-sized pieces if necessary.
Assembling Nigiri

Form the Sushi Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape with your hands.

Top with Unagi
Place a piece of the grilled unagi on top of the shaped rice. Optionally, brush a little more unagi sauce on top for extra flavor.

Garnish and Serve
Place the nigiri on a serving plate. Serve with wasabi, pickled ginger, and sesame seeds. Optionally, use small strips of nori to tie the unagi to the rice for presentation.
