Method
Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed. Remove from heat and let sit, covered, for 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.
Prepare Tuna

Using a sharp knife, cut the super white tuna into thin slices, approximately 1/4 inch thick.

In a small bowl, combine soy sauce and wasabi. Arrange pickled ginger on the side for serving.
Assemble Nigiri
