Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear, about 2-3 minutes. This removes excess starch.

    In a medium saucepan, combine the rinsed sushi rice and 1.25 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit for 10 minutes, covered.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and drizzle with the vinegar mixture. Gently fold the rice to incorporate the seasoning without mashing the grains. Allow the rice to cool to room temperature.

Assemble Nigiri

    Shape the Rice

    Wet your hands with water to prevent sticking. Take a small handful of sushi rice (about 2 tablespoons) and shape it into an oval mound by pressing gently between your palms.

    Add the Smoked Salmon

    Cut the smoked salmon into thin slices, approximately the size of the rice mound. Place a slice of smoked salmon on top of each rice mound.

    Arrange the nigiri on a plate. Serve with wasabi, soy sauce, and pickled ginger on the side. Optionally, sprinkle with sesame seeds for added flavor and texture.
