Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, cover, and simmer on low heat for about 20 minutes until the water is absorbed.

Once cooked, let the rice sit covered for 10 minutes to steam.

Season the Sushi Rice
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved.

Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Be careful not to mash the rice. Allow the rice to cool to room temperature.

Prepare the Shrimp
Fill a small pot with water and bring it to a boil.

Add the raw shrimp and boil for about 1-2 minutes until they turn pink and opaque. Do not overcook.

Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape.

Place one shrimp on top of the formed rice, pressing gently to adhere.

Serve
Arrange the nigiri on a plate. Serve with wasabi and soy sauce on the side. Optionally, you can wrap a thin strip of nori around the nigiri for added flavor.
