Preparation

    Prepare the Vegetables

    Dice the yellow onion, peel and slice the carrots, and chop the seasonal vegetables into bite-sized pieces.

    Cook the Rice

    Ensure you have 4 cups of cooked rice ready. You can use leftover rice or cook it fresh. If cooking fresh, follow package instructions.

Cooking

    Sauté the Vegetables

    In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the diced onions and sauté for 2-3 minutes until they become translucent.

    Add Carrots and Seasonal Vegetables

    Add the sliced carrots and seasonal vegetables to the skillet. Stir-fry for 4-5 minutes until they are tender but still crisp.

    Add Peas

    Stir in the peas and cook for an additional 2 minutes.

    Scramble the Eggs

    Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them for about 2 minutes until fully cooked. Mix with the vegetables.

    Combine Rice and Seasonings

    Add the cooked rice to the skillet along with soy sauce, garlic powder, onion powder, salt, and pepper. Stir well to combine all ingredients.

Adding Protein (optional)

    Cook Shrimp or Chicken

    If adding protein, cook shrimp for 3-4 minutes until pink and opaque or sauté chicken until fully cooked, then slice and add to the rice.

Serving

    Serve Hot

    Serve the hibachi rice hot, garnished with green onions if desired.
