Prepare Avocados

Cut and Scoop
Slice the ripe avocados in half lengthwise and remove the pit. Use a spoon to carefully scoop out some of the flesh to create enough space for the filling.

Prepare Tempura Batter
In a mixing bowl, combine the tempura batter mix with cold water and stir until smooth.

Heat Oil
In a deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Shrimp
Dip each shrimp into the tempura batter, allowing excess batter to drip off. Carefully place the shrimp in the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Mix Ingredients
In a bowl, combine blue crab meat, masago, mayonnaise, sriracha sauce, lemon juice, salt, and black pepper. Mix gently to avoid breaking the crab meat.
Assemble Dragon Eggs

Stuff Avocados
Take each avocado half and fill it generously with the crab and masago mixture. Top with 2-3 pieces of tempura shrimp.

Sprinkle chopped green onions and sesame seeds over the stuffed avocados.
